How to make Crispy and Addictive Cheese Straws

Really addictive cheese straws!

Ingredients
  • 1½ cups extra-sharp Cheddar cheese, coarsely grated and kept cold
  • 1 cup AP four
  • 6 TBSP. cold butter, cut into pieces
  • ½ tsp. salt
  • ⅛-¼ tsp. cayenne pepper
  • 1½ TBSP. milk
Instructions
  1. Preheat the oven to 350 °F. Place the oven racks in the upper and lower thirds of the oven.
  2. Place the cheese, flour, butter, salt and cayenne pepper in a food processor. Pulse until the mixture resembles coarse meal. Add the milk and pulse until the dough forms a ball.
  3. Using a rolling pin, roll out the dough on a lightly floured surface into a 12x10” rectangle, about ⅛” thick. Using a lightly floured pizza wheel, (or a lightly floured sharp knife), cut the dough into ½” wide strips.
  4. Carefully transfer the strips to two baking sheets lined with parchment paper (if the strips tear don't panic; just pinch them back together.)
  5. Bake, switching the position of the sheets halfway through baking, until pale golden, about 15 minutes. Cool completely on the baking sheets on top of racks.
Notes
A delicious variation of this recipe calls for sharp Gorgonzola cheese instead of the Cheddar cheese. To substitute, choose aged Gorgonzola picante (not the Gorgonzola dolce which is soft) or even a good quality blue cheese.
Adjust the cayenne pepper, depending on how spicy you want the cheese straws to be. For kids, I use the smallest quantity, for adults I would definitely increase it.
These cheese straws can be made a day ahead. Keep them in an airtight container at room temperature.
